Who would have guessed we’d be back in lockdown?
Now that Ontario is under the stay at home order, there’s way more cooking and what seems like less meal options. Lorianne Stenson joined Dan and I to share a simple yet delicious recipe – simple taco pasta. Lorianne comes from Algonquin Catering and was the sole caterer for Campo Huronda, a camp for children living with Type-1 diabetes.
Our goal was to come up with a recipe that was easy to make and didn’t break the bank. Below you’ll find all of the ingredients you need and the steps. Follow along with Dan, Lorianne and I in the video linked at the bottom!
Simple Taco Pasta – Serves 4
5 cloves of garlic chopped
Salt and pepper to taste.
Method;
Once cooked strain any access grease and set aside.
In a separate pan with 1 tablespoon of olive oil, sweat your onions on medium heat. Once cooked, add your garlic and cook for another 2 minutes.
Add your grape tomatoes and cook for 3 minutes stirring occasionally.
Then remove most of the juice from you canned diced tomatoes and add to your onions and garlic ( may need the reserved juice later)
Once your sauce is warm add your ground meat and cook for another 6 minutes
Add salt and pepper to taste.
Then add your pasta, toss & stir till pasta is heated through. ( If sauce is dry at this point add remaining juice)
Now serve immediately in a serving bowl and top with your cheese, chopped cilantro and fresh lime juice.

This can totally be made into a casserole the next day or if you use rice this can go on a taco for a second meal.
