Sure, the super bowl is all about football. However, it’s also notorious for food and appetizers! So that’s what we’re making today.

I’m back with another Come Cook With Us sponsored by Peterborough Mitsubishi! Dan, Lorianne and I are making appetizers. Cheesy spinach and garlic stuffed mushrooms & mini bacon cheese ball bites! Check out the ingredients, head to the grocery store and join us for some deliciousness.

CHEESY SPINACH & GARLIC STUFFED MUSHROOMS

INGREDIENTS
1 pint of white button mushrooms or cremini mushrooms (227g pack)
1/2 brick of cream cheese at room temp
200 grams of smoked gouda, plain gouda or havarti
1/2 cup chopped white onion
3 cloves chopped garlic
2 tablespoons of hot sauce
2 cups OR 1 bag of spinach or baby spinach – not frozen
3 tablespoons olive oil or vegetable oil
salt and pepper

METHOD
Preheat oven to 400 degrees
Remove stems from mushrooms and slice
Place mushroom cap on parchment paper on your baking sheet (make sure top of cap is facing down)
Sauté your onions, your stems and your spinach on medium heat with half your oil
After 4 minutes, add your garlic
Cook for another 3 minutes
Remove from heat, mix with cream cheese, hot sauce and shredded cheese
Stuff your caps with your mixture, drizzle remaining oil on mushrooms and bake for 12-13 minutes
Sprinkle with cracked black pepper and serve

MINI BACON CHEESE BALL BITES

INGREDIENTS
1 full brick of cream cheese brick at room temperature
1 green onion finely chopped
4 pieces of bacon (do not use thick cut bacon) – cook off ahead of time, pat dry and chop into small very pieces
1 tablespoon garlic powder
1 teaspoon chili powder
3/4 cup shredded cheddar (garlic and herb shredded cheddar or taco mix shredded cheese works for this recipe)
1 bag of pretzel sticks (has to be sticks)
2 tablespoons of franks hot sauce
Salt and pepper
Chopped chives (optional)

METHOD
Mix your cream cheese with chili powder and garlic powder
Then mix in half your cheese, hot sauce and green onions
Season with salt and pepper
Now spoon or roll the mixture with your hands into tiny 1cm balls
Place in the fridge on a plate or tray for 15-30 minutes until they’re set and hard to the touch
Crumble your bacon, remaining cheese and chives onto another plate
Once your cream cheese balls have set roll them on the plate into your bacon, cheese and chive mixture
Then stick each ball with a pretzel stick and serve with fresh veggies.
There you have it, 2 delicious super bowl appetizers for everyone to enjoy. Especially if you’re only there for the snacks.
